maple sugar week, Vermont, and how you can make your own syrup. ------- PART 2 ---------------------------------- You can use a variety of hard wood trees, but not all trees are suitable for this purpose most types of maple are ok, birch is good. The sugar content will vary according to tree type. We have old growth sugar maples near by, and we also use norway maples that we have on the property. It will take a lot of sap to make any notable amount of syrup. The raw sap from the tree tastes a bit like water with a hint of sugar in it.
